Ar Galletto

This is Ar Galletto’s signature dish; 𝘎𝘢𝘭𝘭𝘦𝘵𝘵𝘰 𝘢𝘭𝘭𝘢 𝘋𝘪𝘢𝘷𝘰𝘭𝘢 or Grilled Rooster “devil style”. Nothing too sinister going on here, “deviled is just a way to signify spicy, Italians also use terms like “fouco” (fire) and “purgatorio” (purgatory, usually has tomato too). ⁣

I’ve only had rooster once. The famous 𝘊𝘰𝘲 𝘢𝘶 𝘝𝘪𝘯 𝘪s meant to be made with rooster, that’s what a coq is. Almost everyone does it with a chicken but one time I had it with rooster. ⁣

But a grilled rooster had me curious. I thought it might be tough or dry but it wasn’t. And you can see the size of it is quite small. Smaller birds are always better. Smaller everything, actually. Big garlic and big fruits are never as tasty. This was like a very glamorous Pollo al Mattone. ⁣

Ar Galletto is one of my favorite restaurants in Rome. Located in the relatively quiet Piazza Farnese which feels hidden, a mere 30 steps from bustling Campo de’Fiori but remarkably unpopulated.
